I make this cake with real ground pistachios (not that artificial green stuff), so the sponge is soft, moist, and speckled with little green bits. Then I fill it with a light pistachio buttercream, cover it in a smooth pistachio or vanilla frosting, and finish with a generous sprinkle of crushed pistachios on top. I said yeah, course. I made a square pistachio sponge, layered it with pistachio buttercream, and covered it in a pale green frosting. She said it was the best cake she’d had in years. That’s a win.

• The square shape – sharp edges, neat slices. Looks modern and clean on a cake stand.

• The look – a pale green or white square, speckled with crushed pistachios on top. I can also add a few edible rose petals or a dusting of icing sugar for contrast.
