Mango Delight Cake – sunshine in sponge form
Right. Mango. It’s one of those fruits that just feels like a holiday. Sweet, tropical, a little bit creamy. When it’s good – really good, ripe Alphonso or Kent – it’s like eating liquid gold.
This cake started because a customer in Grove Park asked for something that tasted like a mango lassi but in cake form. So I made a light vanilla sponge, soaked it with mango puree, then layered it with a mango cream cheese frosting and a few chunks of fresh mango. Then I covered the outside in a pale yellow buttercream and piled more fresh mango on top.
What’s in it?
Vanilla sponge – light, not too dense. Soaked with Alphonso mango puree (the good stuff, not from a tin). Then a layer of mango cream cheese frosting – tangy, sweet, smooth. Between the layers, little chunks of fresh mango. On top, a generous pile of fresh mango slices, a drizzle of mango sauce, and a sprinkle of lime zest to brighten it up.
Where to get it
I bake these in Bromley. People from Downham, Sydenham, Catford and Bellingham order them for summer birthdays, baby showers, or just because they miss the sun. I deliver local, or you can collect from the shop.
Who’s buying this?
Anyone who thinks chocolate is too heavy in July. Mango lovers who buy a box and eat it all in one sitting. And honestly? Anyone who wants a cake that tastes like a tropical holiday without the airport stress.
One thing to know
The fresh mango on top is best the same day – it goes soft overnight. The mango puree soak makes the sponge extra moist, so it keeps well for a couple of days. And if you want it dairy‑free, just ask – I can swap the cream cheese for a coconut whip.

Product Life After Purchase
Our fresh cream cakes have a fridge shelf life of 24 hours and should be consumed within this time. For best results, place the cake in the refrigerator within 45 minutes (maximum 2 hours) of purchase and store at a temperature between 2°C and 5°C.
Refund Policy
We do not offer refunds for cancellations made within 24 hours of the scheduled collection or delivery time. Refunds are also not provided for failed deliveries or cakes that remain uncollected for any reason.

The delivery drivers aim to deliver your order within the selected time slot. However, delays may occur due to circumstances beyond our control, such as traffic. If this happens, we will try to contact you using the phone number you provided.
When the driver arrives, they will knock or ring the bell. If there is no response, they will attempt to call you. If still unanswered, the order will be returned to our store. In such cases, you will need to contact us to arrange redelivery (charged at our standard delivery rate) or collect your order from our store free of charge. Delivery charges are non-refundable.
If you miss your scheduled delivery day and request a refund or a replacement cake for the next day, an additional charge will apply.
For flats or apartment buildings, we kindly ask that you meet the driver at the main entrance.
On receiving your order, please check your cake carefully, especially the written message and its condition. Any damage must be reported immediately. Please take clear photos, inform the driver, and refuse the delivery if necessary. Once a delivery is accepted and the driver has left, it becomes more difficult for us to investigate. As we work with third-party couriers, minor imperfections may occur. While we strive to fulfil every order with care, we ask for your understanding of slight damages. If your cake arrives in poor condition, please take photos and return it with the driver to the store for a refund.
