Right so this one's a bit of a curveball honestly.
Most truffle cakes are just... rich. Heavy. Chocolate on chocolate on chocolate. Which is fine obviously. Love that. But sometimes you want something that fights back a little. Something that's got that deep chocolate hit but then something sharp cutting through it.
That's where this one came from.
I was messing about in the kitchen one day.
Had some chocolate ganache left over from something. Thought right what happens if I add a bit of orange? Then a bit more. Then some lemon zest just to see. And it worked. Like properly worked. The chocolate was still chocolate but the citrus just lifted it. Made it interesting.
So I kept going. Tweaked it. Got it right. Now here we are.
Here's what you're getting.
Chocolate sponge first. Dark. Damp. Proper chocolate taste. Not messing about. Then we soak it. Just a tiny bit. With citrus syrup. Orange and lemon. Not much. Just enough to get that tang through the whole thing.
Then the truffle layer. This bit's the star. It's not buttercream. It's actual ganache. Chocolate and cream melted together until they become this glossy silky thing. Then we add the tang. Zest. Juice. A bit of this and that. Makes it sharp and rich at the same time.
Between the layers? More ganache obviously.
Then on top we go all in.
More tangy truffle ganache. Smooth and glossy. Then chocolate shavings. Then a little twist of candied citrus peel if I've got it. Looks fancy. Tastes even better.
Who's buying these slices?
Chocolate lovers who want something different.
People who find normal chocolate cake boring.
Honestly? Grown ups. This one's not really for kids. Too sophisticated.
Anyone who loves that chocolate orange combo. Classic for a reason.
Me. When I want something rich but interesting.
If you're in Bromley pop in and grab one. They're usually about. If you want to guarantee one maybe message ahead and I'll stick it behind the counter with your name on it.
Or order online for collection or local delivery. Whatever works.
One thing I should mention. It's rich. Like properly rich. You might not manage a massive slice in one go. But you'll keep going back for little bits. Trust me.
Also the tang is proper. It's not just a hint. It's there. If you want something more subtle let me know next time and I'll ease up on the citrus.
Right. That's the tangy truffle slice done.
Rich but sharp. Chocolate but different. Proper grown up cake.
