Right so this one's for the people who like their cake with a bit of a tang.
Not everything has to be sweet sweet sweet. Sometimes you want something that bites back a little. Something sharp and fresh that cuts through and makes you go ooh that's lively. That's this one.
I came up with this because someone asked for something "summer but make it cake."
Their words not mine. But I knew what they meant. They wanted something bright. Something that felt like sunshine and fresh fruit. Something that wasn't chocolate because it was too hot for heavy stuff. So I got thinking about lemon because lemon's perfect for that. Then berries because berries make everything better. And here we are.
Here's what you're getting.
Lemon sponge first. Really light. Fluffy. Zest from actual lemons in there because the bottled juice just doesn't hit the same. Then we soak it. Just a tiny bit. With lemon juice and a little sugar. Keeps it moist and adds that extra sharpness.
Then the lemon buttercream. Not too sweet. Tangy. Fresh. Made with real lemon zest and a splash of juice so it's got that proper zing.
Between the layers? Berries.
Mixed berries usually. Raspberries mostly. Sometimes blueberries if they're good. Little chunks of freshness that burst when you bite into them. Cuts through the sweetness perfectly.
On top we go pretty.
More lemon buttercream. Smooth or swirly depending on the vibe. Then fresh berries arranged nice. Raspberries. Blueberries. Maybe a strawberry half if it's a good one. Then a little grate of lemon zest over the top. Looks fresh. Tastes even fresher.
Who's buying these slices?
Summer people. The ones who live for light fresh flavours.
People who find chocolate too heavy. This is the opposite.
Honestly? Mums. After school run with a coffee. Treat themselves.
Anyone who's had a big meal and wants something that doesn't put them over the edge.
Me. On a warm afternoon. Perfection.

One thing I should mention. The fresh berries on top won't last forever. Like a day maybe two then they start going soft. Still fine to eat just not as pretty. The cake itself keeps fine but the fruit does what fruit does.
Also the lemon is proper sharp. Not like those lemon cakes that taste of nothing. This one's got bite. If you want it milder let me know next time and I'll ease up on the zest.

Product Life After Purchase
Our fresh cream cakes have a fridge shelf life of 24 hours and should be consumed within this time. For best results, place the cake in the refrigerator within 45 minutes (maximum 2 hours) of purchase and store at a temperature between 2°C and 5°C.
Refund Policy
We do not offer refunds for cancellations made within 24 hours of the scheduled collection or delivery time. Refunds are also not provided for failed deliveries or cakes that remain uncollected for any reason.

The delivery drivers aim to deliver your order within the selected time slot. However, delays may occur due to circumstances beyond our control, such as traffic. If this happens, we will try to contact you using the phone number you provided.
When the driver arrives, they will knock or ring the bell. If there is no response, they will attempt to call you. If still unanswered, the order will be returned to our store. In such cases, you will need to contact us to arrange redelivery (charged at our standard delivery rate) or collect your order from our store free of charge. Delivery charges are non-refundable.
If you miss your scheduled delivery day and request a refund or a replacement cake for the next day, an additional charge will apply.
For flats or apartment buildings, we kindly ask that you meet the driver at the main entrance.
On receiving your order, please check your cake carefully, especially the written message and its condition. Any damage must be reported immediately. Please take clear photos, inform the driver, and refuse the delivery if necessary. Once a delivery is accepted and the driver has left, it becomes more difficult for us to investigate. As we work with third-party couriers, minor imperfections may occur. While we strive to fulfil every order with care, we ask for your understanding of slight damages. If your cake arrives in poor condition, please take photos and return it with the driver to the store for a refund.
