Right so this one's a bit of a wildcard if I'm honest.
I first heard about this whole Dubai chocolate thing on TikTok like everyone else. Watched someone cut into this fancy pistachio kunafa bar and thought blimey that looks insane. Then kept seeing it everywhere. Different versions. Different bakers. All going mad for it.
And I thought... yeah alright. Let's have a go.
Took a few tries to get right if I'm honest.
First attempt the kunafa went soggy. Second attempt the ratios were off. Third attempt? Third attempt my mate tried it and just went quiet for a minute which is basically a standing ovation coming from him. So yeah. This is the one.
For anyone who hasn't come across it yet, kunafa is this Middle Eastern pastry. Shredded kinda like vermicelli. Usually used in desserts with cheese and syrup. Sounds weird if you've not tried it but honestly? It's incredible. The texture's like nothing else. Crunchy and chewy at the same time.
Here's how we do ours.
Chocolate sponge base. Nothing too heavy. Just something to hold everything together. Then we layer on the good stuff. A thick spread of pistachio paste mixed with something creamy. Then a generous layer of kunafa pastry that's been baked until golden and crunchy. Then more pistachio cream. Then another layer of kunafa.
Then on top? Chocolate ganache. Smooth. Glossy. Slightly salted because that works with the pistachio. Then a sprinkle of crushed pistachios and maybe a little extra kunafa for crunch.
When you cut into it? That's the moment.
The knife goes through the ganache, then the kunafa gives this little resistance before breaking, then the soft sponge underneath. Different textures in every bite. Honestly it's a whole experience.
Who's buying these slices?
People who've seen the Dubai chocolate trend online and need to try it.
Foodies. The ones always looking for something new and different.
Honestly? A lot of young people. Teenagers. Twenty somethings. They know what's up.
Middle Eastern customers who grew up with kunafa and love seeing it in new forms.
Me. Late at night with a cup of tea. No regrets.
If you're in Bromley pop in and grab one but honestly? They go fast. Like really fast. If you've seen it online and want to try it maybe message ahead and I'll stick one behind the counter with your name on it. Nothing worse than coming all the way and finding out they're gone.
Or order online for collection or local delivery. Whatever works.
One thing I should mention. The kunafa stays crunchy for about a day. After that it softens up. Still tastes amazing just different texture. So best eaten same day if you want that proper crunch.
Also it's rich. Like properly rich.
You might not manage a massive slice in one go. But you'll keep going back for little bits. Trust me.
Right. That's the Dubai choco kunafa one done.
The one everyone's been asking about. Finally on the menu.
