Right so this one's a bit of a debate actually.
Some people say carrot cake is basically a vegetable so it's healthy. Other people say yeah but have you seen the amount of sugar and cream cheese in it. I stay out of it honestly. I just make the thing.
What I will say is this.
When carrot cake's done right? When it's properly spiced and moist and loaded with nuts and that tangy cream cheese frosting? There's nothing quite like it. It's not too heavy. Not too light. Just right really.
This recipe took a while to get right if I'm honest. First few attempts were too dry. Carrot cake can go dry quick if you're not careful. Then I figured out the trick. More butter than you think. Eggs at room temperature. And don't overmix whatever you do. Game changer.
Here's what you're getting.
Warm spices first. Cinnamon. Nutmeg. Little bit of mixed spice. Nothing overpowering just enough to know they're there. Then the carrots obviously. Grated fine so they melt into the cake but you still get little bits. Then walnuts. Toasted first because toasting brings out the flavour. Then raisins or sultanas depending what I've got. Soaked in tea sometimes if I'm feeling fancy.
The sponge comes out dark gold. Moist. Packed with stuff.
Then the frosting. Cream cheese. Has to be. Normal buttercream on carrot cake is just wrong. So we do a proper cream cheese frosting. Thick. Tangy. Not too sweet. Spread generously on top. Sometimes a thin layer in the middle if I'm feeling extra.
On top? More walnuts. Toasted. Crushed. Sprinkled over. Looks rustic. Tastes even better.
Who's buying these slices?
People pretending it's healthy. You know who you are.
Honestly? Grown ups. Carrot cake's not really a kids thing usually.
Autumn people. Something about the spices works when it's cold out.
Easter time? Goes mad actually. No idea why but it does.
Me. With a cup of tea. Perfect combo.

One thing I should mention. The walnuts are optional. If you're not a nut person or someone's allergic just let me know and I'll do it without. Same with the raisins. Some people hate them. I get it.
Also carrot cake's one of those ones that's better the next day.
Something about the flavours settling overnight. So if you buy one today and eat it tomorrow? Might be even better. Not saying wait if you don't want to. Just saying it's an option.
Right. That's the carrot cake slice done.
Healthy? Debatable. Delicious? Definitely.
Product Life After Purchase
Our fresh cream cakes have a fridge shelf life of 24 hours and should be consumed within this time. For best results, place the cake in the refrigerator within 45 minutes (maximum 2 hours) of purchase and store at a temperature between 2°C and 5°C.
Refund Policy
We do not offer refunds for cancellations made within 24 hours of the scheduled collection or delivery time. Refunds are also not provided for failed deliveries or cakes that remain uncollected for any reason.

The delivery drivers aim to deliver your order within the selected time slot. However, delays may occur due to circumstances beyond our control, such as traffic. If this happens, we will try to contact you using the phone number you provided.
When the driver arrives, they will knock or ring the bell. If there is no response, they will attempt to call you. If still unanswered, the order will be returned to our store. In such cases, you will need to contact us to arrange redelivery (charged at our standard delivery rate) or collect your order from our store free of charge. Delivery charges are non-refundable.
If you miss your scheduled delivery day and request a refund or a replacement cake for the next day, an additional charge will apply.
For flats or apartment buildings, we kindly ask that you meet the driver at the main entrance.
On receiving your order, please check your cake carefully, especially the written message and its condition. Any damage must be reported immediately. Please take clear photos, inform the driver, and refuse the delivery if necessary. Once a delivery is accepted and the driver has left, it becomes more difficult for us to investigate. As we work with third-party couriers, minor imperfections may occur. While we strive to fulfil every order with care, we ask for your understanding of slight damages. If your cake arrives in poor condition, please take photos and return it with the driver to the store for a refund.
