You know who you are. You see something with coconut on a menu and you're like oh go on then. You put coconut in your smoothies. You've definitely bought coconut water even though it tastes a bit like nothing. You're just... coconut people. I respect it.
This slice came about because someone asked for something that felt a bit tropical but not over the top.
They didn't want pineapple or mango or anything loud. Just something gentle. Something that reminded them of holidays without shouting about it. So I thought right vanilla and coconut. Classic combo. Can't go wrong.
Here's what you're getting.
Vanilla sponge first. Nice and light. Fluffy. Real vanilla because the fake stuff would let the coconut down. Then we soak it. Just a tiny bit. With coconut milk actually. Not cream because that's too heavy. Just enough to add moisture and a hint of coconut throughout.
Then the buttercream. Now this bit's good. It's vanilla buttercream but with toasted coconut mixed through. Not raw coconut. Toasted. Because toasting it brings out this almost nutty flavour that works perfectly. Makes the buttercream a bit crunchy in the best way.
Then more sponge. More coconut buttercream. Then on top? More toasted coconut obviously. Piled up. Maybe a light dusting of icing sugar if I'm feeling fancy. Sometimes a little edible flower if it's a weekend thing.

One thing I should mention. The toasted coconut on top might fall off a bit. That's normal. It's not glued on. Just happens. If you want extra I can always throw some in a little bag for you to add yourself. Just ask.
Also if you're one of those people who hates desiccated coconut texture? Fair enough. Let me know and I can do it with coconut extract instead so you get the flavour without the bits. Takes all sorts.

Product Life After Purchase
Our fresh cream cakes have a fridge shelf life of 24 hours and should be consumed within this time. For best results, place the cake in the refrigerator within 45 minutes (maximum 2 hours) of purchase and store at a temperature between 2°C and 5°C.
Refund Policy
We do not offer refunds for cancellations made within 24 hours of the scheduled collection or delivery time. Refunds are also not provided for failed deliveries or cakes that remain uncollected for any reason.

The delivery drivers aim to deliver your order within the selected time slot. However, delays may occur due to circumstances beyond our control, such as traffic. If this happens, we will try to contact you using the phone number you provided.
When the driver arrives, they will knock or ring the bell. If there is no response, they will attempt to call you. If still unanswered, the order will be returned to our store. In such cases, you will need to contact us to arrange redelivery (charged at our standard delivery rate) or collect your order from our store free of charge. Delivery charges are non-refundable.
If you miss your scheduled delivery day and request a refund or a replacement cake for the next day, an additional charge will apply.
For flats or apartment buildings, we kindly ask that you meet the driver at the main entrance.
On receiving your order, please check your cake carefully, especially the written message and its condition. Any damage must be reported immediately. Please take clear photos, inform the driver, and refuse the delivery if necessary. Once a delivery is accepted and the driver has left, it becomes more difficult for us to investigate. As we work with third-party couriers, minor imperfections may occur. While we strive to fulfil every order with care, we ask for your understanding of slight damages. If your cake arrives in poor condition, please take photos and return it with the driver to the store for a refund.
