Some cakes hide their magic. This one doesn’t. From the outside, it’s a fluffy white cloud – whipped buttercream or cream cheese frosting, soft and pillowy. But then you cut into it. And there it is. Rainbow. Red, orange, yellow, green, blue, purple – all stacked up in perfect layers. So I figured out how to keep the layers even, the colours bright, and the outside a secret. Each layer baked separately, then stacked with a thin layer of vanilla buttercream between. On the outside, a cloud of whipped white chocolate ganache or cream cheese frosting – your choice.
